A Chestnut Mushroom and Gruyère Tart is a culinary masterpiece that combines the earthy richness of chestnut mushrooms with the nutty complexity of Gruyère cheese. For the Tart Crust:

  • 1 ½ cups all-purpose flour

  • ½ teaspoon salt

  • ½ cup cold unsalted butter, cut into small cubes

  • 3-4 tablespoons ice water

For the Filling:

  • 1 pound chestnut mushrooms, cleaned and sliced

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • 1 cup Gruyère cheese, grated

  • ¼ cup fresh parsley, chopped

  • 3 large eggs

  • ½ cup heavy cream


1. Prepare the Tart Crust:

  1. In a food processor, combine the flour and salt. Pulse a few times to mix.

  2. Add the cold butter cubes to the processor and pulse until the mixture resembles coarse crumbs.

  3. Gradually add ice water, one tablespoon at a time, and pulse until the dough comes together. Be cautious not to overmix.

  4. Turn the dough out onto a floured surface, form it into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.

2. Roll Out and Line the Tart Pan:

  1. Preheat the oven to 375°F (190°C).

  2. On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.

  3. Prick the bottom of the crust with a fork to prevent it from puffing up while baking.

  4. Line the crust with parchment paper and fill it with pie weights or dried beans.

  5. Blind-bake the crust for about 15 minutes. Remove the weights and parchment paper and bake for an additional 5 minutes until the crust is lightly golden. Remove from the oven and let it cool slightly.

3. Prepare the Filling:

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

  2. Add the minced garlic and sliced chestnut mushrooms to the skillet. Sauté until the mushrooms are cooked and any liquid has evaporated. Season with salt and pepper to taste.

  3. In a bowl, whisk together the eggs and heavy cream. Stir in the grated Gruyère cheese and chopped parsley.

  4. Spread the sautéed mushroom mixture evenly over the baked tart crust.

  5. Pour the egg and cheese mixture over the mushrooms, ensuring even distribution.

4. Bake and Serve:

  1. Place the tart on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden brown.

  2. Remove the tart from the oven and let it cool slightly before slicing and serving.
